Greens

Choose greens that are clean and fresh. Avoid wilted or discolored greens. Greens include turnip, mustard, collard, and kale.

Peanut Butter Banana Nut Salad

 

-1 tablespoon peanut butter

-1 tablespoon honey

-1/4 cup mayonnaise or salad dressing

-2 bananas

-2 tablespoons lemon juice

-2 cups shredded lettuce

-1/4 cup chopped peanuts

 

Makes 4 servings.

1. In a small bowl, stir together thepeanut butter and honey. Blend in mayonnaise or salad dressing.
2. Cut bananas in half lengthwise; dip in lemon juice.
3. Arrange banana halves on shredded lettuce in salad dishes.
4. Spread peanut butter mixture over bananas; sprinkle with nuts.

Salad with Blue Cheese and Walnuts

 

-2 cups mesclun or mixed salad greens

-1/4 cup chopped walnuts, toasted

-2 T blue cheese, crumbled

 

Dressing

-1 1/2 tsp lemon juice

-1/8 cup white wine vinegar

-1/8 cup olive oil

-3 small garlic cloves finely minced or pressed.

-salt & pepper to taste

-one or two drops of hot sauce

 

Serves 2

Toss salad greens, walnuts and blue cheese together. Whisk together all dressing ingredients. Pour over salad. Toss and serve.
